I am not a fan of oatmeal. I have texture issues and mushy food, no matter how yummy, just doesn’t work for me. However, I know how important breakfast is and I really am trying to do better with eating a healthful breakfast. When I was nursing I came up with these great Breakfast Cucakes. They are full of nutrition, but not mushy!
Last week Kacie shared her Coconut Banana “Oatmeal” recipe with DDT. I think the crunch from the coconut would get me past my reservations. I also like that it is gluten and dairy free. Both my parents are on restrictive diets so I can’t wait to share this new breakfast option with them!
