Homemade Chicken Noodle Soup
1 leftover chicken carcass (I usually make a whole chicken for dinner one night and save the leftover carcass and whatever meat wasn’t eaten).
2 sticks of celery
2 carrots
1/2 onion
8 oz. of egg noodles (or whichever pasta you prefer)
Salt & pepper
Optional favorite seasonings
Put your chicken carcass in a large stockpot and cover with water. Add salt and pepper and boil for an hour.
While this is boiling chop up your vegetables and feel free to use more if you are a veggie-lover. Take out the chicken (It will be falling apart so this can be tedious, sorry)
*Congrats, you totally just made some chicken stock!
Once the broth is mostly chicken free add your chopped veggies, bring to a boil and then simmer.
Here’s the hardest part: start picking the chicken meat from the bones. You will also have to separate skin too. *Please make sure you are careful to get all of the bones out!
You can now discard of the bones and skin.
Pull or cut your chicken into bite-sized pieces and then add it to the simmering soup. You may need to add more water at this point.
Grab your pasta and boil it to al dente in a separate pot.
After the vegetables have simmered for an hour, add the pasta and any other seasonings you see fit.
Congrats, you did it, so now enjoy!
If you used leftover chicken then this meal just cost you a couple of bucks at most!

There is nothing better than homemade chicken noodle soup! I cannot stand the chicken pieces from the can. This looks delicious!
