I am still going to try my “modified Paleo” diet. I can’t do no carbs, no beans, no dairy. However, I am really enjoying the menu plans I am getting from Emeals and the Paleo one seems to be the best fit for our eating style. They have been great about changing my plan while I try to figure out what will work best. The website allows you to change your plan once a month, however if you want to change it more than that in the beginning to find the right fit, just email their customer service and they will do it right away for you!
So, modified Paleo it is ~ I can just add in a rice or pasta or cheese where it seems to fit for me. However, I do want to try and cut some of the unnecessary carbs out of my diet and the Paelo can help with that as well as just getting the “junk” out!
So here is what we plan to eat for the week. What is on your menu?
Monday: Minestrone Soup with Blue Cheese-Parmesan Meatballs (have the last batch sitting in the freezer)
Tuesday: Cashew Chicken Salad (my take on a meal from this week’s Emeals Paleo plan)
Wednesday: Spicy Flank Steak with Radish Slaw (from this week’s Emeals Paleo plan)
Thursday: Chicken Caprese (a friend shared this from her low carb Emails plan)
Saturday: Chicken Fajitas (I will make mine into a salad – no tortilla)
