I love beets. I didn’t realize this until just a few years ago. I think as a kid for some reason I just associated them with canned beets (which btw are also great in my opinion for certain things). Or maybe I just thought I wouldn’t link them. For whatever reason, I didn’t try to cook with them until a few years ago. Now I can’t stop searching for and trying different beet recipes.
We went vegetable picking at a local farm’s harvest festival on Sunday and we got a lot of beets! Below are a few recipes I can’t wait to try (in fact, I have some beets roasting in the oven as I write this). Click on the pictures and they will take you to the original recipe post.

I love beets from a can but I never though about cooking any beet dishes. Interesting recipes.

I love beets! It’s a hard sell to the rest of the family… Oh well, more beets for me! These recipes look great- thank you for sharing.
I luv beets, too. I love the beet greens just as much. If grilling, I wrap beets in foil with the skin on. After they are grilled, and cooled, it is easy to slip off the skin. Did you know Martha Stewart uses a tiny amount of beet juice in rhubarb to make it come out nice and red? I like them cold and with vinegar in salads, and just plain.
