Quick Homemade Cinnamon Roll Recipe

I love cinnamon rolls but I never remember to start the recipe far enough in advance to use traditional cooking methods (you have to let the dough rise for hours).  I have finally found a great *quick* cinnamon roll recipe using instant yeast that tastes just as good as traditional recipes.  I usually double this recipe and freeze half.

Place milk and 1/4 cup  of the butter in a saucepan and “scald” the mixture (heat until just before the boiling point).  Let cool until lukewarm.

In a large mixing bowl, combine 2 1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.

Cover the dough with a damp cloth and let rest for 10 minutes. While you are doing this, allow your toddler (no kids? that’s ok, you can do this yourself too) lick the beater.  It isn’t quite the same as cookie dough but she will still thank you!

Roll out dough into a 12×9 inch rectangle.  Spread dough with softened butter.  Sprinkle with brown sugar and cinnamon.

Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. If you are freezing some, this is the time to place them in your pan for the freezer and cover with plastic wrap.

When defrosting frozen cinnamon rolls, take them out the night before and put them in the refrigerator.  Before baking set them on the counter for at least 30 minutes to bring them up to room temperature.

Cover cinnamon rolls and let rise until doubled, about 30 minutes.  Preheat oven to 375.

Bake in the preheated oven for 20 minutes, or until browned.  Serve warm.
