Last week Aunt B on a Budget shared two great salads with the hop.  I love them because they are not traditional salads.  Her Carrot, Raisin and Apple Salad with Orange Dressing is a fun way to make inexpensive ingredients fancy and add different layers and textures to a salad.  The Brown Rice and Cabbage Salad is something I have never heard of before.  I combines such unique ingredients.  Adding the rice makes it a hearty dish that could stand up on its own or pair well with any meat.

We had a beautiful weekend with temperatures in the 80′s.  However, in true Colorado fashion we had a drastic temperature drop and temperatures yesterday and today are in the 40′s (there was even snow this morning!).  To me, cold weather means soups or warm, hearty pasta dishes.  This week I am sharing with you my Pasta and Meatball Meatloaf.  This is such a fun recipe to make.
