Slow Cooker Lasagna

I love my slow cooker, and I love lasagna, but I have always worried about combining the two.  Would the noodles cook?  Would the noodles be soggy?  But today I finally took the leap and decided to it out.  Why the heck did I wait so long?  It was wonderful!  The noodles were perfectly cooked and the flavor was amazing.  I love adding layers of vegetables in with the meat and noodles.  If you want to hide the added nutrition, just peel the eggplant (or other vegetable of your choice) and they will just melt in with everything else.  With our daughter being so young, I try to not hide her vegetables but instead teach her to love them.  She kept calling the eggplant zucchini, but she loved it so I was ok with it :)

Slow Cooker Lasagna

Cook Time: 6 hours

Total Time: 6 hours, 20 minutes

Yield: 6-8

Ingredients

  • 1 lb. lean ground beef (I always use organic, grass fed beef- it just tastes better!)
  • 1 jar of your favorite pasta sauce
  • 1 cup water
  • 1/2 cup chopped fresh parsley
  • 1 eggplant (thinly sliced into rounds)
  • 9-12 whole wheat lasagna noodles (uncooked)
  • 2 cups Italian blend cheese

Instructions

  1. Brown beef in a large skillet and drain the fat.
  2. Stir in pasta sauce, water and parsley.
  3. Place one cup of meatsauce in the bottom of your slow cooker.
  4. Top with 3-4 noodles, breaking to fit the shape of your slow cooker.
  5. Top with 1 cup meat sauce and 1/2 cup cheese. Repeat using remaining noodles, sauce, and cheese. Leave 1/2 cup cheese for serving.
  6. I make this the night before and place the insert in the fridge. At lunch the next day I place the insert in the slow cooker.
  7. Cook for 4-6 hours on low (any longer and the noodles will get soggy).
  8. Top with remaining 1/2 cup cheese and melt right before serving.
