Wednesday: Won’t Miss the Meat Vegetarian Chili in the slow cooker
Thursday: Leftovers (got a hockey game to go to so we want something quick and easy to eat beforehand)
Friday: Dinner out for Restaurant Week in Denver
Saturday: Camarones a la Diabla (making extra for the freezer)
Sunday: Pasta and Meatballs Meatloaf

I had planned to allot some extra money to restock the pantry this month but life has a way of throwing us curves. Not only will I not be restocking but, after today’s small shop for vegetables and staples, there is no money at all in the grocery jar. It’s kind of thrown my meal planning for a loop but we do still have vegetables (fresh and home-canned), lots of canned fruit, eggs, a little meat in the freezer, salmon in jars, canned turkey in jars, and I was able to get flour. I’ll be rethinking the menu to minimize our use of dairy products and to make do with what we have on hand. We won’t go hungry but it’s going to require some serious thought.
