Island Fish (or Shrimp) Salad #Recipe

I recently got the opportunity to review (and giveaway) coconut oil from Tropical Traditions.  I had heard such amazing things about the stuff, but had never used it.  I have been experimenting with it over the last week or so and am hooked!  This salad has a great island flavor and is wonderful with fish or shrimp (I have made it with both over the last week alone!)

For the Fish
4 4oz grouper fillets
1 T. chili powder
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 lime, juiced
1 T. coconut oil

For the Dressing
1 T. olive oil
1/4 c. red wine vinegar
2 limes, juiced
2 tsp. soy sauce
1 T. grated fresh ginger
2 garlic cloves, grated
1/2 tsp. red pepper flakes

For the Salad
8 c. mixed lettuce (I usually choose the organic spring mix with herbs)
8 radishes, thinly sliced
1 red bell pepper, chopped
1/2 red onion, chopped
3 medium carrots, chopped

Combine marinade ingredients (up to, but not including coconut oil) and poor over fish.  Cover and refrigerate for 1-3 hours.  The reason you can’t include the coconut oil in the marinade is that it is solid at room temperature.  Remove fish from refrigerator.  Heat a large sauce pan over medium high heat. Add coconut oil to melt.  Add fish and saute for 3-5 minutes per side.

In a large salad bowl, combine the dressing ingredients and whisk until smooth.  Add chopped veggies and top with the lettuce.  Toss just before serving to avoid wilting of the lettuce.  Top with fish and enjoy 1x1.trans Island Fish (or Shrimp) Salad #Recipe

  2. This sounds wonderful! I have been using coconut oil for a while now and really like how it works in recipes. It can be a solid or a liquid and has a very mild flavor. Thank you for sharing your delicious salad recipe with the Hearth and Soul Hop.
