We have decided to join the Meatless Monday movement. This is something we have done in the past, but then it kind of fizzled out. I’m not sure why. Meatless meals are wonderful for your health and your pocketbook! This recipe is so flavorful you will never miss the meat (or even really know it is not there).
1 c. lentils ($1.00)
1 T. taco seasoning ($0.10- buy in bulk if you cook a lot of Mexican foods)
1 tsp. cayenne powder ($0.05)
1 tsp. garlic powder ($0.05)
1 c. refried beans ($0.15- homemade, more if you buy them)
12 tostada shells ($0.75)
2-3 c. shredded lettuce ($0.50)
1 avocado, chopped ($0.88)
4 green onions, chopped ($0.25)
1 large handful cilantro, chopped ($0.25)
1/4 c. shredded cheddar cheese ($0.50)
Cook lentils according to package directions. Drain most of the water. Stir in seasonings. Add refried beans and mix well. Layer lentil mixture and veggies on top of tostada shells and enjoy!!
