Crystal at Money Saving Mom and Jessica at Life as Mom have come up with a great idea to make January an Eat from the Pantry month. This couldn’t have come as a better time for us. We have decided to move at the end of February. Our first child is due at the end of May and we have decided to move back to Colorado and be around all of our family! But we have a chest freezer and pantry that are full of food. While I would love to say that we will only buy milk products and produce at the store this month, I know it won’t completely happen. For some great ideas on how to make meals work with what is in your pantry, visit Alea at Premeditated Leftovers. I will try each week to post our menu plans, recipes, and a grocery store tally.
I started this challenge off without really knowing it. As soon as we made the decision to move, I knew we had about two months to eat everything in our freezers. (The pantry items can always be packed or donated to the food bank, but the plan is to eat it all). Last weekend I sat down and filled out a freezer inventory. For a great template you can print out visit Once a Month Mom. Having a list of everything in the freezer pinned to the fridge will be a huge help.
Now, I just have to start making menu plans. Many of the people participating in this challenge are doing a menu plan for the entire month. I know we will never stick to it if we plan that far ahead, so I will continue to do a weekly menu plan trying to only use items we already have on hand. This is going to be a tough challenge, but it couldn’t have come at a better time, and we are excited to embark on this journey with so many other great people!!
